Ingredients You’ll Need For This Recipe

  • ½ large English cucumber
  • 2 large tomatoes
  • 1/2 large onion
  • Salt and pepper
  • 12–16 mini mozzarella balls
  • 3-4 olives

Step-by-Step Guide

1. Dice the tomatoes finely and cut the onion into small pieces.

2. In a small bowl, mix the tomatoes and onions with a bit of salt and pepper, then mix well to combine. Set aside for 5-10 minutes.

3. Wash the cucumber half and cut it into 25 thick slices.

4. Lay the slices on a paper towel, sprinkle them with salt, and let them sit for five minutes to release excess moisture.

5. After five minutes, pat the cucumber rounds dry with another paper towel.

6. Once the bruschetta mix has rested for 5-10 minutes, drain it by pouring it through a fine sieve or pressing gently with the back of a spoon to remove any excess liquid.

7. Lay the cucumber slices on your serving tray, then spoon a little bit of the tomato-onion mix onto each one.

8. Add a mini mozzarella ball on top of each.

9. Slice the olives into quarters and place one or two slivers on top of each mozzarella ball.

  • How many pieces you get depends on how much topping you use for each cucumber round. I love giving mine a bit more height, because I find they look a lot fancier this way!
  • Use ripe but firm tomatoes.
  • Make sure you cut the tomatoes and onions into very small pieces – the smaller you cut them, the better you can pile them onto the cucumber slices later.
  • Cut the cucumber into about 1/2-inch slices. Any thinner than that, and they won’t be able to hold the topping; any thicker than that, and the cucumber will overpower the rest of the flavors.
  • Salting the cucumber slices and patting them dry is super important as it helps keep the topping in place and prevents watery bites. Don’t skip this step!
  • Draining the bruschetta mix is equally important, as the tomatoes will release quite a bit of water as you let them rest, and if you skip this step, you’ll end up with a watery mess on your serving platter.
  • Because of the last two points, it’s best to assemble the bites up to an hour before serving.
