- 2 oz cream cheese
- 3.5 oz mozzarella
- Salt and pepper, to taste

1. Place the mini toasts or baguette slices on a parchment-lined baking tray and brush lightly with oil.
2. Broil the toasts in the oven for 5–7 minutes, until the edges begin to brown and crisp.
3. Remove the tray from the oven and flip each toast so the untoasted side is facing up. Set aside.
4. Heat a small pan over medium heat with the butter.
5. Add the minced garlic and water, then the fresh spinach.
6. Cook until the spinach has wilted and any liquid has evaporated. This will take about 5-6 minutes.

- I prefer using fresh spinach for this recipe as frozen spinach is usually chopped too small, and I don’t like how it looks in party dishes. If you do want to use frozen spinach, make sure to cook it longer to remove all the excess water and use 1 full cup of frozen spinach.
- Keep an eye on the toasts as they can burn quickly, especially when brushed with oil. About 5-7 minutes is usually more than enough.
- If you want some more flavor, add a couple of tablespoons of Parmesan cheese to the mix.
- These little toasts taste and look their best when served warm. They’ll keep in the fridge for a couple of hours if you need to make them ahead, but be sure to pop them back under the broiler for a few minutes before serving to remelt the cheese and reheat the bread.
