  • 4 large flour tortillas (10-inch size)
  • 1 English cucumber
  • 10 ounces cream cheese, softened to room temperature
  • 4 ounces grated cheese
  • 10–12 green onion sprigs, chopped
  • Salt and pepper, to taste

    Step-by-Step Guide

    1. Thinly slice the cucumber into approximately 40 slices.

    2. Arrange the slices on a clean kitchen towel or paper towel and cover them with another towel.

    Allow them to rest for several minutes to absorb excess moisture.

    3. Using a sharp knife, trim the rounded sides from each tortilla to create straighter edges.

    4. In a medium-sized bowl, combine the softened cream cheese, grated cheese, chopped green onions, salt, and pepper.

    5. Stir until smooth and evenly combined.

    6. Divide the cheese mixture between the four tortillas.

    7. Spread the mixture evenly all the way to the edges, but leave a very thin layer of cream cheese along the top edges to help seal the rolls later.

    8. Cut 8 of your cucumber slices into thin strips (slice them in half or into three).

    9. Place four cucumber strips horizontally along the bottom edge of each tortilla.

    10. Arrange two rows of full cucumber slices across the tortilla, leaving about ½ inch between the rows.

    11. Fold the bottom ½ inch of the tortilla upward before rolling.

    12. Starting from this folded edge, roll the tortilla tightly into a log, keeping the filling tucked inside as you go.

    13. Wrap each tortilla roll tightly in plastic wrap and refrigerate for at least 30 minutes to allow the filling to firm up.

    Important Recipe Notes

    • I trim off the outer edges of my tortillas, as they don’t usually hold enough filling to create full pinwheels, and I always end up with flat, uneven pieces. By removing these edges before filling, I get cleaner rolls, more evenly sized pinwheels, and a much prettier presentation on my serving tray.
    • Make sure to let your cucumber slices rest on a paper/kitchen towel for a little bit to remove excess moisture. If the slices are too wet, the tortillas will become soggy a lot quicker.
    • Make sure to fold the bottom edge up ½ inch to make rolling easier and create a tighter spiral inside each pinwheel.
    • Leave about 1 to 1½ inches near the top edge free of bulky filling. A thin layer of cream cheese is fine, but too much filling near the edge will squeeze out as you roll.
    • For the cleanest cuts, use a very sharp knife and wipe the blade clean between slices if needed.
    • These pinwheels can be made 2–3 hours ahead of time. Any longer and the tortillas may begin to soften too much from the filling and the cucumber slices.
