- You can use a sharp knife or a small cookie cutter for cleaner edges and more uniform pieces.
- Because I used short toothpicks, I kept my skewers to only 4 pieces of fruit/cucumber and cheese each.
- I also wanted to have some variety on the platter, so some of my skewers had watermelon, cucumber, and goat cheese, others had cantaloupe and honeydew with cheese, etc. Make whatever flavor combo you please!
- Once you’re ready to serve your skewers, drizzle them generously with the mint vinaigrette, but do this in a separate dish, then move the finished skewers to your serving plate. That way, they don’t sit in the excess vinaigrette and get soggy or too juicy.
- Use firm goat’s cheese, so it holds its shape when skewered
- Cube everything evenly for the best visual result
- Chill the skewers before serving for maximum refreshment
