These mixed berry Eton mess desserts are a light, creamy layered treat made with fresh summer berries, fluffy cream, and crisp meringue pieces.
It’s a very simple mix of textures – deliciously soft, crunchy, and juicy at the same time – that comes together in the prettiest little dessert glasses.

It’s an easy no-bake dessert recipe that’s perfect for summer parties, 4th of July barbecues, or when you just want something fresh and a little indulgent that’s super easy to put together.
How To Make These Mixed Berry Eton Mess Desserts
Ingredients You’ll Need For This Recipe
- 9 ounces mascarpone cheese
- 3–4 tablespoons granulated sugar
- 2 ½ cups canned whipped cream
- 2 cups fresh blueberries
- 4 cups fresh strawberries
- 2–3 mini pavlova nests (or meringue cookies)
Step-by-Step Guide
1. Wash the blueberries and strawberries and let them dry on a clean kitchen towel or paper towel for a bit.
2. Remove the stems from the strawberries and cut them into smaller bite-sized pieces.
3. Crumble the pavlova nests or meringue cookies into rough chunks.
You want a mix of small and slightly larger pieces for texture.
4. In a large bowl, whip the mascarpone with the granulated sugar until smooth and creamy.
5. Add the whipped cream and gently whip again until everything is fully combined and fluffy.
6. Spoon about 1–2 tablespoons of the cream mixture into the bottom of each dessert glass.
7. Top the cream with a layer of meringue pieces, followed by a layer of chopped strawberries.
8. Spoon another layer of the mascarpone cream over the strawberries, but make sure to leave a little bit for the final garnish.
9. Add a layer of fresh blueberries on top.
10. Top with a final dollop of cream and sprinkle a few more meringue pieces over the top for texture.
11. These desserts are best served right away while the meringue is still crisp and the cream is fluffy.
Important Recipe Notes
- I used 7-ounce dessert glasses, which worked perfectly for the listed quantities. If using larger glasses, you may want to increase the ingredients or reduce the number of servings.
- If you’re making larger portions in larger glasses, consider adding an extra layer of meringue between the cream and blueberry layers for more colors and texture.
- I only had canned whipped cream on hand when making this dessert, and it worked perfectly here! The only thing is, it softens a lot faster than freshly whipped cream, so it’s best to assemble the desserts and serve them right away.
- I recommend that you definitely taste the cream mixture before assembling the desserts! Since the meringue is already sweet and I love the natural sweetness of the fresh summer berries, I didn’t make the cream too sweet. You may want a sweeter dessert!
- You can use store-bought meringue cookies if you don’t have homemade pavlova nests.
